2008 American Raw Milk Presidium Evaluation Results |

The first evaluation for the American Raw Milk Cheese Presidium was held on Friday, June 27, at the Artisanal Cheese Center in New York City. Our team of evaluators were Max McCalman, Dean of Curriculum for Artisanal Cheese Center, author, and Maitre Fromager; Erin Hedley, educator at the Artisanal Cheese Center and owner of La Dame du Fromage; and Anne Saxelby, owner and proprietor of Saxelby Cheesemongers. Evaluators were deeply impressed by the quality of raw milk cheeses submitted for evaluation. As Max McCalman commented, "So many wonderful cheeses . . . what a thrill it is to see what's happening here in America. I am so proud, and very lucky too. It was a pleasure and a great honor to be invited to evaluate these jewels."
We are also offering copies of the sheet used for this evaluation as a public resource for cheesemakers. We encourage cheesemakers to read the procedure and use the evaluation sheet on their own cheeses.
While the primary goal of this evaluation was to provide constructive feedback to the cheesemakers producing American raw milk cheese, it was also important to choose cheeses that would be represent American Raw Milk Cheese Presidium for 2008. Cheeses from the following list will be included this year at Slow Food convivia events, at Slow Food Nation, and at Salone del Gusto in Italy. We thank all who participated and congratulate them on their excellent efforts. We also encourage you to spread the good word and continue to check this website for events that include 2008 Presidia cheeses. |
