Hillis Peak is a washed curd cheese from Pholia Farms in Rogue River, Oregon. It is made from Nigerian Dwarf Goat milk. It is aged from 4-6 months and has a natural rind that is rubbed with oil and paprika during aging. The paste is creamy and slightly sharp with herbal overtones. |

Trade Lake Cedar, from LoveTree Farmstead in Grantsburg Wisconsin. Is a natural rind sheep milk cheese aged in open air caves on cedar boughs. It’s definitely “aromatic” with fruity and woodsy undertones. |
